My basic recipe for poached chicken just uses the simplest seasonings of salt, pepper and Italian herbs.  Feel free to add more seasonings of your choice! You can also add chopped onions and carrots to the water, and even take it a step further by using the chicken stock instead of water.

Instructions

  • Put the chicken breasts in a pot. Add enough water to cover the chicken plus 1 inch on top. Add salt, pepper and Italian seasoning.
  • Bring water to a boil over medium-high heat. When it starts boiling, cover the pot and take it off the heat. Let stand for 20 minutes or until the chicken is cooked through (make sure to not open the lid until the 20 minutes are up).
  • Remove the poached chicken from water, put it on a cutting board and slice.
