Who doesn’t love a yummy corn muffin to go with your favorite meal! I even like to eat them for breakfast sometimes. I love them because they aren’t loaded with a lot of sugar, but still feel like I’m indulging in a tasty muffin. And making cornbread muffins in the air fryer is so simple that I find myself making and enjoying them often!
The recipe uses simple ingredients that you likely already have on hand. And all you have to do is mix the Jiffy corn muffin mix together as stated on the box, pour the batter into some silicone muffin cups, put the muffins in the air fryer, and then bake until perfectly golden brown! They come out hot and ready to be spread with some butter or honey.

How to Make Jiffy Corn Muffins in the Air Fryer
These muffins are really easy to make and the recipe only requires a few simple ingredients!
Here is what you will need:
- 1 Box Jiffy Corn Muffin Mix
- 1 Egg
- 1/3 Cup Milk
- Nonstick Cooking Spray
Before you begin, make sure that you have 6 silicone muffin cups and an air fryer that can fit all of them. Then place the muffin cups into the air fryer basket and spray the insides of them with nonstick cooking spray. This is done so that the muffins are sure not to stick to the cups.
Next, pour the package of corn muffin mix into a large bowl. Then add the egg and milk to the muffin mix. Now, mix everything together with a fork until well combined.
Once fully mixed, divide the muffin batter between the 6 muffin cups in the air fryer basket.
Then place the basket into the air fryer and bake the muffins at 300°F for 17 minutes.
When the corn muffins are done, remove them from the air fryer and enjoy!
How to Store Air Fryer Corn Muffins
These air fried muffins will keep for about 3 days at room temperature when stored either covered or in a container. You can also store them in an airtight container or sealed bag in the freezer for months.
To reheat, just put them in the microwave for about a minute at medium power or in the oven at 350 degrees Fahrenheit for about 3-5 minutes. From frozen, I suggest you allow the muffins to thaw out at room temperature and then reheat.
Air Fryer Cornbread Muffins Variations
You can add a little something more to your muffins if you like! Nuts and dried cranberries can easily be mixed right into the batter. Another great addition is canned corn for a savory muffin or blueberries to add a little sweetness. You can be as creative as you like, but do keep in mind that you only want to add a little of whatever it is that you mix in so that the muffins still properly cook in the air fryer.

Instructions
- Place the silicone muffin cups in the air fryer basket. Then spray the inside of the cups with nonstick cooking spray to keep the muffins from sticking.
- Next, pour the package of corn muffin mix into a large bowl. Then add the egg and milk to the muffin mix. Now, mix everything together with a fork until well combined.
- Using a spoon divide up the batter between the 6 muffin cups in the air fryer basket.
- Place the air fryer basket into the air fryer, set the temperature to 300°F, and cook for 17 minutes.
- When done, transfer the muffins from the air fryer and enjoy!
