Air Fryer Zucchini And Mushrooms

Get ready for a delicious veggie-filled recipe: Air fryer zucchini and mushrooms! This air fryer recipe is amazing and incredibly simple to make. Not to mention versatile- you can season it up however you like for a quick side dish. It’s also super healthy for those of you on a low carb or gluten-free diet!
Air Fryer Zucchini And Mushrooms
I’ve really been into just cutting up any leftover veggies I have in the fridge and roasting them in the air fryer. Wow! They turn out SO yummy every. single. time.
And this time, it’s no different.
I had a couple of zucchini and mushrooms leftover after I made my chicken cauliflower rice stir fry and just really wanted to do something with them before they went bad.
So, I just chopped them up, seasoned them, and tossed them in the air fryer for a few minutes, and voila! Air fryer zucchini and mushrooms ready for dinner.
It’s really easy- here’s everything you need to make it yourself.
Ingredients Needed To Make This Air Fried Zucchini and Mushrooms Recipe
Besides the obvious veggies needed, you will also need:
- Salt
- Pepper
- Olive oil
- Garlic powder
Different Veggie Seasoning Combos
Now for this recipe, you can honestly use any seasoning combo you like. I just try to keep things simple most of the time; however, here are a couple of different seasonings I recommend trying if you want to spice things up (get it?)!
How To Make Roasted Zucchini And Mushrooms In The Air Fryer
Before cooking or eating any of the veggies, make sure to give them a good rinse, and pat them dry. After prepping the veggies, chop the zucchini and mushrooms into bite-size pieces. Make sure to cut them as evenly as possible so they cook all the way through.
Add the zucchini and mushroom pieces into a bowl. Drizzle them with some olive oil and sprinkle salt, pepper, and garlic powder over the top.
Using your hands, give them a good toss until all of the veggies are coated, and have combined with the seasoning.
Place the cut-up zucchini and mushrooms into the air fryer basket. Air fry at 400 degrees for 15 minutes, shaking the basket halfway through the cooking time.
Serve immediately and enjoy!
Cooking Tips
- You don’t need to peel the zucchini for this recipe!
- Have any leftover veggies? Throw them in there as well! Just make sure to not overcrowd the air fryer basket.
What To Serve With Roasted Zucchini and Mushrooms
Since I already had the air fryer on, I decided to go ahead and throw in some bbq chicken legs and make some sweet potato fries to go along with the veggies.

Ingredients
- 2 zucchini
- 16 oz mushrooms
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp garlic powder

Instructions
- Chop zucchini and mushrooms (you don't need to peel the zucchini).
- Put zucchini and mushroom pieces in a bowl, drizzle with olive oil and sprinkle with salt, pepper and garlic powder. Toss with your hands to combine.
- Put zucchini and mushrooms in the air fryer basket. Air fry at 400F for 15 minutes, shaking the basket halfway through the cooking time.
