Baked Greek Lemon Chicken Thighs

This baked Greek lemon chicken is SO easy to make for a quick and healthy dinner or even as meal prep for your lunches for the week! Marinated in Greek yogurt and herb seasonings, this greek chicken recipe is incredibly flavorful, juicy, and tender.
Baked Greek Lemon Chicken Thighs
This is one of my favorite chicken recipes to make, and my family loves it too! I think one of the reasons I crave this baked Greek chicken so much is the light freshness it has to it from all of the herbs and lemons in the marinade.
This recipe makes 4 perfect servings. So, it makes it easy to serve for dinner one night or you have 4 meal prepped lunches to take to work or have on hand!
Not to mention, everything is ready to serve in under 40 minutes! Which, in my opinion, is amazing if you are having a crazy busy week.
Depending on your preference for white or dark meat, you can easily swap out the chicken thighs for boneless chicken breasts. You can also use chicken legs or chicken wings.
How To Prepare Greek Lemon Chicken Thighs
To make the chicken marinade, add some olive oil, lemon juice, Greek yogurt, minced garlic, Italian seasoning, salt, and pepper into a bowl. Mix everything together until it’s combined.
Add the chicken thighs to the marinade and toss them in the bowl to fully coat the chicken. Marinate the chicken for about 30 minutes on the counter or in the refrigerator overnight.
If you don’t have time to marinate, that’s totally okay, you can skip it!
While you are marinating the chicken, preheat the oven to 425 degrees. Line a baking sheet with parchment paper for easy cleanup.
Place the chicken thighs on a baking sheet in a single layer, making sure to not overcrowd the pan. Put the baking sheet in the oven and bake the greek chicken for 30 minutes.
Cooking Tip
Check the internal temperature of the chicken with an instant read thermometer and make sure it hits 165 degrees within those 30 minutes. This will help you make sure you don’t overcook and dry out the chicken thighs.
What To Serve With Baked Greek Chicken
I highly recommend serving these chicken thighs with a side of Greek lemon potatoes and a tomato-cucumber feta Greek salad. Oh, and don’t forget to make some of my homemade Greek tzatziki cucumber yogurt sauce to drizzle over the top or serve as a dipping sauce on the side!
Looking for something more low-carb friendly? Cook up a bowl of zucchini noodles and toss in some of the Greek chicken, chopped cherry tomatoes, and crumbled feta. It’s a delicious way to get in your protein and veggies!

Ingredients
- 1 1/2 lbs boneless skinless chicken thighs
- 1/4 cup olive oil
- 1/3 cup freshly squeezed lemon juice
- 1/2 cup plain Greek yogurt
- 4 garlic cloves minced
- 2 tbsp Italian seasoning
- 1 tsp salt
- 1/2 tsp pepper
