Reread recipe a couple of times. When do you add the salt and pepper? Before or after cooking? Also, why two sheets?
Salt and pepper are added after cooking, as the spinach leaves shrink (so end up needing a smaller amount of salt). Two baking sheets as one doesn’t have enough space for spinach leaves to fit in a single layer.
