Ingredients

  • 1 banana
  • 1 egg
  • 1 tbsp milk or coconut milk or almond milk
  • 1 tbsp maple syrup or honey
  • 1/2 tsp vanilla extract
  • 2 tbsp coconut flour
  • 1/2 tsp cinnamon
  • 1/4 tsp baking powder

Instructions

  • Mash banana in a microwave-safe mug with a fork.
  • Add egg, milk, maple syrup and vanilla and whisk with a fork until combined.
  • Add coconut flour, cinnamon and baking powder and mix until combined.
  • Put the mug in a microwave and microwave on High for 3 minutes.

  1. Tried this as a dessert after dinner and it was so good!! The bottom was slightly undercooked but it made it taste like banana bread pudding instead :)

    Yummy recipe! Moist and delicious. I used honey because that’s all I had. It still turned out good but would’ve probably tasted better with maple syrup. Will try that next time! Thank you for the recipe.
