Chicken Cauliflower Fried Rice

This chicken cauliflower fried rice is even better than take-out! The best thing about it is that it’s gluten-free and low-carb too.
Chicken Cauliflower Fried Rice
This is one of those meals that is so easy you’ll be able to fall back on it on those nights when you really don’t feel like cooking, but you want something healthy. The cauliflower rice is the perfect substitute for starchy white or brown rice.

This is a kid-friendly meal. So if you are trying to cut your carbs but you still want to make something the entire family will love, go for this recipe. Seriously, they won’t even care that you used cauliflower rice. It’s that good!
This is also a great choice if you want to take food to someone and you don’t know if they have any food allergies. It’s a comforting dish that will fuel your body with healthy nutrients.
As you can see, it makes a lot of food! I can fill up my plate and it really does fill me up without any extra sugars or carbs. Amazing!
There are lots of ways to change this up (and I’ll get to them in a bit). The base recipe is what I keep going back to though.

How To Make Chicken Cauliflower Fried Rice
Get all your ingredients together and get ready to cook! Cut up the broccoli, chop up your cooked chicken, and grab some cauliflower rice. You can use frozen packaged cauliflower rice or make cauliflower rice from scratch from whole cauliflower.
Heat some oil in a large non-stick frying pan over medium-high heat. Then, add the broccoli to the skillet and cook it for a few minutes.
After the broccoli is fully cooked remove it from the pan. Then, add more oil, some soy sauce, minced garlic, and pepper to the skillet. Add your cauliflower rice to the skillet.
Cook the rice with the spices and soy sauce until it turns a nice golden color. Keep cooking it until the cauliflower rice is fully cooked.
Add the broccoli and cooked chopped chicken to the skillet and keep cooking it while stirring it constantly.
After the broccoli and chicken are fully cooked with the cauliflower rice, add the eggs and stir to combine. Keep stirring it while you cook it together.
What To Serve With Chicken Cauliflower Fried Rice
This really is an entire meal by itself. You don’t have to serve much with it! My spicy garlic sesame sauteed kale would be a really zesty addition to your Chinese dinner.

Chicken Broccoli Cauliflower Fried Rice
Ingredients
- 12 oz cauliflower rice thawed
- 1 cup cooked chicken chopped
- 1 cup broccoli chopped
- 2 eggs
- 2 tbsp soy sauce
- 2 tbsp olive oil
- 2 garlic cloves minced
- 1/4 tsp black pepper

Instructions
- Heat 1 tbsp of oil in a large non-stick frying pan over medium-high heat. Add the broccoli and cook, covered, for 2 minutes.
- Add another 1 tbsp of oil, soy sauce, minced garlic, black pepper, cauliflower rice and cooked chicken. Cook, stirring occasionally, for 5 minutes, or until cauliflower rice is cooked.
- Add the eggs and stir to combine. Cook, stirring, for 1 minute.
