Baked Chicken Broccoli Fried Rice Casserole

Chicken fried rice that you don’t have to fry? Introducing the chicken broccoli fried rice casserole! Just dump all ingredients into a baking dish and dinner is ready!
This chicken broccoli fried rice casserole is the easiest dinner ever! All you need to do is put the uncooked rice, chicken pieces and broccoli in a baking dish, pour the mixture of water, soy sauce, oil and honey over it, cover and bake for 1 hour. When the timer beeps, take out your casserole dish, uncover the foil, fluff the rice with a fork and your delicious chicken broccoli fried rice dinner is ready!
This is true “dump dinner” – no pre-cooking of any ingredients needed! Everything is put in a casserole dish in its raw form – uncooked rice, raw chicken and uncooked broccoli. Just dump all the ingredients in the baking dish, cover and bake for 1 hour. All these ingredients will cook together in the oven, and the sauce will flavor them all!
Instead of cooking rice on a stove or rice cooker, the rice actually cooks in the oven – it’s a baked fried rice! Yes, there are many way to cook the rice – sometime I even cook rice in a microwave :) The soy sauce with oil permeates the rice and mimics the flavor of fried rice without all the work! Feel free to substitute the broccoli with any other veggies or simply omit it. Frozen vegetables will work too – just open a package and throw them all in! Baked Chicken Broccoli Fried Rice Casserole
Ingredients
- 1 1/2 lbs chicken breast
- 1 cup broccoli florets
- 2 cups white rice uncooked
- 1/4 cup vegetable oil
- 1/4 cup soy sauce
- 1/4 cup honey
- 4 cups water
Instructions
- Preheat the oven to 350F. Spray a non-stick 9x13 inch baking dish with cooking spray.
- Cut the chicken breast into 1-inch pieces.
- In a bowl, mix oil, soy sauce, honey and water.
- Put rice in a baking dish. Top with chicken and broccoli.
- Pour the water mixture over the rice.
- Completely cover the baking dish with foil.
- Put the baking dish in the oven and bake the chicken fried rice casserole for 1 hour.
I wonder if brown rice can be substituted…? Man this looks yummy!!!
Unfortunately I don’t think it will work with brown rice as it takes much longer to cook then white.
