Beef Chili Soup Recipe

This Chili Soup is an easy meal that feeds a crowd! And you probably have most of the ingredients in your pantry right now. Just ground beef cooked up in a skillet; plus beans, salsa, and frozen veggies. I find it helpful to keep the shelf-stable items in my kitchen for anytime I want to make this chili soup. Then all I need to do is defrost some ground beef or pick it up at the store, and I’ve got an easy meal that my whole family will devour.

And we love to enjoy this soup with toppings and some crusty, delicious bread on the side. Depending on what I have in my fridge, I’ll serve this soup with small bowls of broken-up tortilla chips, sour cream, shredded cheese, and chopped green onions. If you’re feeling adventurous, you can even add a sprinkle of hot sauce on top! It’s totally up to you.

How To Make Chili Soup

First you’ll need to cook up the ground beef. Set a frying pan to high heat and add the beef. Wait until it starts to sizzle, then turn down the heat to medium-high. Break up the beef into crumbles, using a spatula. Then cook for 5 minutes (stirring every minute) until meat is browned and cooked through.

Turn off the heat and season the beef with salt. Stir to incorporate.

Move the ground beef to a soup pot. Use a slotted spoon to leave as much of the cooking grease behind as possible.

To the pot, add the can of beans, frozen vegetables, salsa, and four cups of water. Stir to mix it up.

Turn the heat on high. Once the soup starts boiling, turn the heat down to a simmer (low). Cook for 15 minutes, then turn off heat. Check to see if soup needs more seasonings. If it’s ready, move pot off of heat and ladle soup into bowls for serving.

Cooking Tips

  • This recipe calls for just salt to be added, since the salsa is very flavorful. However, feel free to add any seasonings you love in chili
  • If you use lean ground beef, there will not be much grease left behind in the frying pan
  • No need to defrost the frozen vegetables, just add them right into the pot

    I used ground turkey instead of beef and it turned out great, served it with some tortilla chips and it was a perfect meal.
