Eggs are one of the most versatile and healthy ingredients to cook with! You can eat them for breakfast, lunch, or dinner and they are used in almost all cuisines. And this delicious Chinese tomato egg stir fry is the perfect example.

This dish is fluffy scrambled eggs and tasty tomatoes cooked together with a bit of green onion and seasoned with just a touch of soy sauce and garlic powder.  It’s a super simple recipe that is bursting with flavor and only takes 10 minutes to make!

How To Make Chinese Tomato Egg Stir Fry

This simple dish only requires a handful of affordable and easy to find ingredients! And it’s a versatile recipe so feel free to get creative with it!

  • Eggs – You will need some whole eggs. But you could also use a liquid egg product if you like. 
  • Tomatoes – I used roma tomatoes but any type of tomatoes will work.
  • Green Onion – You only need one green onion. Dried chives could be used as a substitution. 
  • Soy Sauce – You can also use salt instead to season the eggs.
  • Black Pepper – White pepper is another option as well as cayenne pepper to make the eggs spicy.
  • Garlic Powder – If you prefer you can use fresh minced garlic or garlic paste. Ground ginger is also really good in this dish.
  • Olive Oil – Any type of vegetable oil can be used. Sesame oil is another option that adds lots of flavor.

To begin, heat some olive oil in a large frying pan over high heat on the stovetop. Next, add the tomatoes. Then once the oil begins to sizzle turn the heat down to medium-high and cook the tomatoes for about 5 minutes stirring them every minute. The tomatoes are done when they are soft and tender.

Now, crack the eggs and add them to the tomatoes. You can crack them right into the frying pan. Then add the sliced green onions and mix everything together as you break up the eggs.

Next, season the eggs and tomatoes with some of the soy sauce, black pepper, and garlic powder. Then continue to cook the eggs over medium-high while stirring constantly until they set. This will take about a minute or less.

Once the eggs are ready, transfer them to a dish and enjoy!

How To Store

Leftover Chinese tomato egg stir fry will keep in the fridge for about 4 to 5 days in an airtight container. To reheat, just put the stir fry in the microwave for a few minutes on medium power or heat it on the stove in a skillet. You can also freeze the leftovers for up to 3 months.

What To Serve With Chinese Tomato Egg Stir Fry

This dish is really versatile and can be served as is or in a number of other ways. For example, you can serve it over some Instant Pot Jasmine Rice or some Mushroom Rice. Better yet! How about over some Air Fryer Frozen Cauliflower Rice to keep the meal low carb.

Another way to serve this dish is with some Air Fryer English Muffins and Air Fryer Bacon for breakfast or brunch. You could even serve this tomato egg stir fry with Sweet Potato Hashbrowns.

  • 4 eggs
  • 2 tomatoes chopped
  • 1 green onions sliced

Instructions

  • Heat some oil over high heat on the stovetop in a large frying pan. Then add the chopped tomatoes.
  • Once the oil begins to sizzle move the tomatoes around the pan and then reduce the heat to medium-high. Now, cook them for about 5 minutes or until soft, stirring them every minute.
  • Add the eggs to the tomatoes. You can crack them right into the frying pan. Next, add the sliced green onions. Then break up the eggs with a spatula and mix everything together.
  • Season the egg mixture with a bit of soy sauce, black pepper, and garlic powder. Now, continue to cook and stir the eggs over medium-high until they set, which will take about a minute or less.
  • When the eggs are set, transfer the dish to a plate and enjoy!
