Chopped Caprese Salad
Ingredients
- 1 pint cherry tomatoes
- 4 oz fresh mozzarella cheese
- 1 small package fresh basil leaves
- 1 tbsp extra-virgin olive oil
- 1 tsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Cut cherry tomatoes into halves or quarters.
- Cut fresh mozzarella into cubes.
- Tear the basil leaves into pieces and discard the stems.
- In a cup, combine the olive oil and balsamic vinegar, and whisk with a fork to combine.
- Put chopped tomatoes, mozzarella and basil in a bowl. Drizzle the oil and vinegar dressing over it. Mix everything until combined and coated with dressing. Add salt and pepper to taste.
