When it comes to toppings for cottage cheese pancakes, the possibilities are both delicious and nutritious. Fresh berries, such as blueberries or strawberries, add a burst of antioxidants and natural sweetness. Sliced bananas and a drizzle of honey or maple syrup provide a classic yet wholesome combination. For an extra crunch, sprinkle chopped nuts, such as almonds or walnuts, on top. Greek yogurt or a dollop of low-fat whipped cream can also enhance the texture and flavor. The versatility of cottage cheese pancakes allows you to customize toppings based on your taste preferences while maintaining a balance of flavors and nutritional benefits.

Drizzle 1 Tablespoon of avocado oil on the griddle. You could also use olive oil or vegetable oil instead. With a pastry brush, coat the griddle surface in an even layer of oil.

Add to a blender: 1/2 cup of oatmeal, 1/2 cup of cottage cheese, 2 eggs, 1/2 teaspoon of baking powder, and an 1/8 teaspoon of salt. Blend ingredients for about 30 seconds or until you have a smooth batter.

Pour pancake batter onto the hot griddle. You should have enough batter for about 8 pancakes. If there is any left, add a little bit of batter to any smaller pancakes to make them all as evenly sized as possible.

Cook for about 3 minutes, then carefully flip the pancakes over. Cook pancakes for another 2 minutes or until they are golden brown on both sides.

Use a spatula to move the pancakes from the griddle to a serving plate.

Cooking Tips

  • You may need to shake the blender bottle midway through blending, to catch any ingredients stuck to the top of the bottle
  • A good clue that the pancakes are ready to be flipped for the first time is seeing tiny bubbles on the surface of the batter
  • Try topping pancakes with maple syrup or berries for extra flavor
