Ingredients
- 1 sheet frozen puff pastry
- 1/2 cup cranberry sauce
- 8 oz Brie cheese
- 1/2 cup pecan halves

Instructions
- Preheat the oven to 400F. Spray the mini-muffin tin thoroughly with non-stick cooking spray (or alternatively you can line it with mini paper baking cups).
- Roll a puff pastry sheet into a 14x10 inch rectangle. Cut the puff pastry into 6 equal strips on the long side and 4 equal strips on the short side, making 24 rectangles.
- Put the puff pastry rectangle inside the mini-muffin cups, pressing them so it lowers to the bottom of the cup.
- Cut Brie cheese into 24 pieces.
- Put 1 tsp of cranberry sauce into each puff pastry cup, then top with a piece of Brie cheese, and add a pecan on top. Repeat with remaining pastry cups.
- Bake the cranberry brie pastry bites for 15 minutes, or until golden brown.

If I’m really pressed for time I just used the pre baked puff pastry tart shells found right next to the puff party. Big time saver, look really pretty, and if I buy 2 boxes I get 30 with this amount of cheese. They’re a little smaller, but that’s ok, since I’m always serving 3 or 4 other appetizers as well.
