How To Make Cucumber Chickpea Salad

This is a no-cook side dish that’s full of flavor and crunch!

Start by draining and rinsing a can of chickpeas. Add prepped chickpeas to a big salad bowl.

Now it’s time to wash and chop the cucumber. Cut it in half, lengthwise; then cut further into strips. Finally, chop into pieces. Add the cucumber to the bowl.

Cut a red onion in half. Slice off the stem and cut into strips. Then dice the onion into small pieces. Add onion to the salad bowl.

Next chop the leaves off of a bunch of parsley. Discard stems. Run knife through leaves a few times until they are chopped into pieces. Add parsley to the bowl.

Let’s make the dressing. Slice a lemon in half and squeeze the juice of one half into a mug or small bowl. Pour in olive oil. Whisk to combine into a dressing. Pour over salad ingredients.
