Curried Roasted Cauliflower

Baked to tender tasty perfection this Curried Roasted Cauliflower is super yummy and really easy to make with very little prep! It’s a simple healthy side dish recipe that is vegan, gluten-free, and low carb that you can whip together super easily!

Curried Roasted Cauliflower

Move over potatoes! As you probably know cauliflower is all the rage these days! And while I do still love my potatoes, especially Instant Pot Mashed Potatoes, adding more cauliflower to your diet is a great way to cut back on some of the carbs and calories.

Not to mention, recipes like this curried roasted cauliflower are incredibly good with very little effort involved. In fact, with this delicious recipe all you have to do is toss some fresh cauliflower florets together with a bit of olive oil and curry powder, then pop it in the oven to roast, and serve!

How To Make Curried Roasted Cauliflower

This yummy recipe doesn’t require much at all and is full of flavor. The curry powder makes the dish. This is all you need:

  • Cauliflower – You’ll need a whole head of raw cauliflower. You can also use pre-cut florets that equal about the same amount as one head. I don’t suggest using frozen cauliflower florets for this dish.
  • Olive Oil – Extra virgin olive oil will add the most flavor, but you can also use vegetable oil if you prefer.
  • Curry Powder  – You can find yellow curry powder in the spice aisle of your local market. 
  • Seasonings – Salt and black pepper are used for seasoning.

To begin, preheat your oven temperature to 425°F. Then line a large rimmed baking sheet with parchment paper or a silicone baking mat to prevent the cauliflower from sticking.

Next, put the cauliflower florets into a large bowl. Then drizzle them with the olive oil and then sprinkle them with the curry powder, salt, and black pepper. Now, toss everything together until all the cauliflower florets are completely coated with the oil and curry powder.

Now to bake, put the seasoned cauliflower on the prepared baking sheet and spread it out in a single layer. Then put it in the oven to bake for 30 minutes or until tender. Finally, when done, serve the curried roasted cauliflower immediately with your favorite main dish and enjoy!

Storage

Leftover roasted curried cauliflower will keep in the fridge for up to 5 days.  To reheat, put the cauliflower in the microwave for about 3 minutes on medium power or in the oven on a sheet pan at 350 degrees Fahrenheit for about 7 minutes. You can also store the leftovers in the freezer for up to 4 months when kept in an airtight container.

Cooking Tips

  • Your oven must be fully preheated before you put the cauliflower in to bake. If not, the cauliflower will not roast properly.
  • You can adjust the amount of oil and seasonings used to fit your preference.
  • If the cauliflower is not tender after 30 minutes just leave it in the oven for a few more minutes to bake.
