Chicken Salad Sandwich Recipe
My favorite recipe for leftover rotisserie chicken is the chicken salad! Whenever I have leftover chicken, I turn it into chicken salad sandwiches the next day. There are many different chicken salad recipes, but it all comes down to chopped cooked chicken, chopped hard boiled eggs and mayo, with different extra ingredients for different chicken salads.

Sweet Potato Fries
These sweet potato fries are from a frozen package, and I buy them in Costco. All you need to do is preheat the oven to 450F and bake these fries for 25 minutes. The sweet potato fries will be hot and crispy, and best of all they are pretty healthy as they are oven baked, not deep fried! Learn more about Costco sweet potato fries.
