Easy Spanish Paella
- 2 cups short-grain rice
- 4 cups chicken stock
- ½ tsp saffron threads
- 1 bay leaf
- 3 cloves garlic, minced
- ½ tsp red pepper flakes
- 4 tbsp olive oil
- 1 large onion, chopped
- 1 red bell pepper, chopped
- 1 lb chicken breast or thighs, cut-up
- 1 lb cooked shrimp, peeled and deveined
- ½ lb chorizo sausage, crumbled
Baked Apricot Chicken Drumsticks
- ½ cup apricot jam
- ¼ cup soy sauce
- 2 jalapeno peppers
- 4 gloves garlic
- 12 chicken legs
Pineapple Pita Pizza
- 8 pita breads
- 1 tbsp olive oil
- 1 can (8 oz) pizza sauce
- 1 package (8 oz) shredded mozzarella cheese
- 1 can (8 oz) chopped pineapple, drained
- 1 small onion, sliced
Homemade Crab Cakes
- 1 lb lump crab meat (preferably fresh, but you can use canned drained crab meat)
- 1 egg
- ¼ cup mayo
- 1 tbsp freshly squeezed lemon juice
- 5 green onion stalks
- ½ cup Ritz or saltine crackers, crushed (approximately 15 Ritz crackers)
- ¼ cup flour
- ½ tsp salt
- ¼ tsp pepper
- 2 tbsp oil
Mexican Beef Enchiladas
- 12 corn tortillas
- 1½ lbs ground beef
- 1 onion, chopped
- 4 garlic cloves, minced
- 1 can (8 oz) tomato sauce
- 1 bunch of cilantro (leaves chopped, stems discarded)
- 1 package (8 oz) shredded cheddar cheese
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tbsp oil
Easy Plum Pie
- 8 medium plums
- 2 cups flour
- ¾ cup sugar
- 1½ sticks (12 tbsp) butter, cut in 12 pieces
- 1 egg
