What’s For Dinner MONDAY – One Dish Chicken And Rice Meal
In this easy and tasty recipe, chicken and rice are cooked together in one pot. Onions and carrots are first stir-fried with chicken pieces and garlic, and then the rice and water is added and everything is cooked together. This results in rice getting a deep flavor from the chicken and seasonings, and less dishes to wash for you!

This main dish salad has chopped chicken, egg, roasted peppers, tomatoes, cucumbers and feta cheese served over a bed of lettuce greens. This delicious and healthy dinner will leave everyone full!

One Dish Chicken And Rice Meal
- 1 lb boneless skinless chicken breast
- 1 cup white rice
- 2 cups water
- 1 carrot
- 1 onion
- 2 garlic cloves, peeled
- 2 tbsp oil
- 1 tsp salt
- ¼ tsp pepper
Chopped Salad With Chicken And Roasted Peppers
- 1 lb chicken breast, cooked and chopped
- 4 hard-boiled eggs, peeled and chopped
- ½ cup crumbled feta cheese
- 2 roasted red peppers, chopped
- 2 tomatoes, chopped
- 2 cucumbers, peeled and chopped
- 4 cups lettuce leaves
- 2 tbsp extra-virgin olive oil
- 2 tsp vinegar
Vegetarian Enchiladas
- 12 corn tortillas
- 1 onion, chopped
- 4 garlic cloves, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- ½ bunch cilantro, chopped
- 1 package (8 oz) shredded cheddar cheese
- 2 cans (8 oz each) tomato sauce
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tbsp oil
Pineapple Shrimp Stir Fry
- 1 lb cooked tail-off shrimp
- ½ pineapple
- 8 oz frozen green peas
- 8 oz mushrooms, chopped
- 2 bell peppers, chopped
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tbsp oil
Ground Meat And Potato Bake
- 2 lbs ground beef
- 2 onions
- 8 potatoes
- 1/4 cup mayo
- 1 package (8 oz) shredded cheddar cheese
- 1 tsp oil
Chocolate Truffles
- 16 oz dark chocolate
- 1 cup heavy cream
I like all these recipes…chicken & rice, vegetarian enchiladas, and chocolate truffles! Heck yeah!! So much yummy :)
Some really good stuff here. Gotta try that pineapple shrimp! :-)
Oh dear, I’m afraid my eye is attracted first of all to the chocolate truffles- I must force myself to be a ‘responsible cook’ and provide my family with a balanced diet. Those chocolates sure do look good!
