Leftover Brown Rice Recipes
This dish is a fantastic way to use any leftover brown rice you might have in your fridge. It adds so much flavor and is a kid-friendly way to add more vegetables to your meal. Just sauté with oil, garlic, and soy sauce! And this dish just builds in flavor, making a great option for batch-prepping meals for the week.
We used frozen peas and carrots in this dish, but you can use any kind of veggies you love in stir fry. Fresh or frozen, whichever is your preference. Bell pepper strips, celery, zucchini, bean sprouts, cauliflower, and onions are all good options. Vegetables add a great texture and plenty of nutrients to this side dish.

How To Make Fried Brown Rice
Heat a pan to high on the stovetop. Add vegetables. Cook for about 5 minutes, stirring every minute, or until the vegetables are tender. If they start to burn, turn the heat down to medium.
Using a heat-safe utensil, clear a spot in the middle of the ingredients. Add the oil and garlic.
Wait for a few seconds, or until you smell the garlic cooking. Then add the brown rice and toss everything together with a spatula.
Once again, make some space in the middle of the pan. Crack two eggs into the spot. Turn the heat back to high and scramble it together with the rice. Cook for about 2 minutes or until the eggs are done.
Add 2 Tablespoons of soy sauce (or more or less to taste) and mix everything together. Taste the fried rice and season as needed.
Once it’s done, turn off the heat and move the rice from the pan to a serving bowl.
