How To Make Funfetti Cake Mix Cookies
This easy cookie recipe from cake mix is easy! With just a few simple steps, you’ll have a batch of colorful and scrumptious treats ready to enjoy!
First, you need to gather a few ingredients:
- Funfetti Cake Mix: The star ingredient that brings the fun to these cookies! This recipe will also work with another other type of cake mix.
- Eggs: They help to bind the batter together and provide structure while making the cookies soft and chewy.
- Vegetable Oil: The oil adds moisture to the cookies, which helps to create a softer texture and prevent them from becoming dry. Any neutral flavored oil like canola oil will do the trick.
Once you’ve gathered all your ingredients you can jump right into cookie making!
To begin, preheat your oven to 350℉ so that it’s hot and ready to go! Then line a large baking sheet with parchment paper or use a silicone baking mat to ensure that the cookies don’t stick.
Next, whisk the eggs in a large bowl. Then add the funfetti cake mix and vegetable oil to the beaten eggs and stir the ingredients together until the mixture forms a thick and dough-like consistency.
Now, form 8 cookies by dropping large portions of the dough onto the prepared baking sheet. Make sure to leave plenty of space between each cookie to allow room for spreading as they bake.
To bake, transfer the baking sheet to the preheated oven and bake the cookies for 12 minutes. Then remove them from the oven and let them cool on the pan for 10 minutes to firm up before putting them on a cooling rack. The cookies may appear slightly undercooked, but they are supposed to still be pale on top and will set more as they cool.
Finally, serve your yummy funfetti cookies on a platter or store them in an airtight container for later!
Expert Tips
- Use room temperature eggs for the best texture and even incorporation of ingredients.
- Chill the dough to prevent the cookies from spreading too much during baking.
- Line your pan with parchment paper or a silicone baking mats to prevent the cookies from sticking.
- Make sure to leave enough space between the mounds of dough to allow the cookies enough room to spread without merging into each other.
- Rotate the pan halfway through the baking time. This helps the cookies to bake more evenly.
- Let the cookies cool for at least 10 minutes on the baking sheet. They need this time set for the perfect soft and chewy texture.
