Mediterranean Quinoa Salad With Feta

You can make this salad exactly as you like it! Add crumbled feta to taste. Whisk up our simple salad dressing of olive oil and lemon juice or add a vinaigrette of your choice. Finish off with salt and pepper or your favorite seasonings for veggies.

And you can adjust the quantity of ingredients to your preference or whatever’s in your fridge! Try Roma tomatoes or cherry heirloom tomatoes. Add extra cucumber if you like. With the basic ingredients of cooked quinoa, cucumber, tomatoes, and red onion, this salad is refreshing and flavorful every time.

How To Make Greek Quinoa Salad

Prep the ingredients: cook the quinoa and wash the vegetables.

Slice the tomato and remove the stem. Slice further into strips and chop into pieces. Add to a large salad bowl.

Cut cucumber in half, then cut each half into long slices. Chop into pieces and add to the bowl.

Cut stem off 1/2 of red onion and peel. Slice onion and chop into pieces. Add to salad bowl.

Chop the parsley leaves from the stems. Discard stems. Run knife through parsley leaves until chopped into small pieces. Add to the bowl.

Open can of olives and drain out liquid. Add olives to the salad bowl.

Next add crumbled feta cheese to taste. We used 2 ounces.

Squeeze the juice of half a lemon into a liquid measuring cup. Add 2 Tablespoons of olive oil and stir to combine. Pour over salad.

Sprinkle on salt and pepper to taste. Toss salad to combine ingredients. Now it’s ready to serve!

Cooking Tips

  • Salad also delicious with a double portion of quinoa
  • You can peel the cucumber or leave the peel intact
  • Quantities of vegetables can be adjusted to taste or available ingredients
  • Can omit olives if that’s your preference

1 cup of quinoa cooked in 2 cups of water will result in 3 cups of cooked quinoa.
