The key to grilling Italian sausage is to know your grill. Depending on how hot it runs, you’ll need to adjust the heat to cook the sausages completely without burning. If, at any point, the sausages start to char before they are done cooking, just turn down the heat. Keep cooking until the internal temperature is at least 165 degrees and the sausages are cooked to your liking.

How To Make Grilled Italian Sausage
Start by preheating the grill to high heat (500 degrees) and closing the lid.
Once the grill is preheated, you can add the sausages. Reduce the heat to medium and close the lid. Cook for 2 minutes.
Open up the grill and check the sausages. Flip them over. If necessary, reduce the heat. Close the lid and cook for another 2 minutes.
Check the sausages again. Flip them over and cook (lid closed) for 3 more minutes or until they are cooked through. Check their internal temperature with a meat thermometer. It should read at least 165 degrees. If not, cook the sausages for another minute.
Once the Italian sausages are done, use fresh tongs to take them off the grill and then turn off the heat.
Cooking Tips
- Closing the lid during the preheating process will help the grill to heat up quicker
- If, at any point, the sausages start to burn, just turn down the heat
- Be sure to use clean tongs to remove cooked Italian sausages from the grill
Do You Pre-Cook Sausages Before Grilling?
No, it is not necessary to cook (boil) Italian sausages before grilling them. To make sure they are cooked throughout, use a meat thermometer to check the internal temperature. Once the grilled sausages reach 165 degrees, they are done cooking.
