First you will need to boil the eggs. Put the eggs in a pot and fill the pot with water until the eggs are completely covered and submerged in water. Cover the pot with a lid and let the eggs sit in the hot water for about 10 minutes.

Prepare the Eggs

After you have boiled the eggs, rinse them under cold water to cool them off enough to handle. Then peel off the shells from the eggs.

Cut the eggs in half lengthwise and remove the yolks. Put the yolks in a mixing bowl and the egg whites on a platter.

Crumble up the egg yolks with a fork until they are mashed up pretty good.

Add a little mayo and mustard to the mashed up yolks and mix it all together. If you don’t like the consistency of the mixture, add a little more mayo and mustard until it suits you.

Fill the Eggs

Now you want to fill the holes in the egg whites with the yolk, mayo, and mustard mixture. You can do this by spooning the mixture in, which can get a little messy, or you can use a piping bag. If you don’t have piping bags, you can make your own with a plastic bag. Fill the plastic bag with the mixture, squeeze the mixture down into a corner of the bag, snip off the tip of that corner, and then squeeze the mixture into the holes of the egg whites.

Carefully slice the eggs in half lengthwise.  Remove the yolks with the spoon and put them in a bowl.  Put the egg whites on a plate.

Add the mayo, mustard and salt to the yolks and mash with the fork.   Spoon the yolk filling back into the egg whites.  Sprinkle deviled eggs with paprika and top with parsley.
