Tips For Success
- Choose the right artichokes: When selecting artichokes, look for ones that are firm and heavy for their size. The leaves should be tightly packed and have a deep green color. Avoid artichokes that appear dry or have browning leaves.
- Trimming the artichokes: While it’s not necessary to trim the artichokes for this recipe, you may choose to snip the thorny tips from the leaves with kitchen scissors and cut off the top inch of the artichoke for a cleaner presentation.
- Arranging the artichokes: Make sure to place the artichokes stem-side down in the Instant Pot. This allows them to cook evenly as the steam circulates around them.
- Quick-release method: Use caution when releasing the pressure from your Instant Pot. The steam is very hot, so it’s best to use a long-handled spoon to carefully turn the valve to the venting position.
- Test for doneness: The artichokes are done when the leaves pull off easily. If they still feel a little tough, you can return them to the Instant Pot and cook for an additional 1-2 minutes on high pressure.
Variations And Substitutions
- Seasoning options: While these Instant Pot artichokes are delicious on their own, you can add some flavor by sprinkling a bit of salt, pepper, or garlic powder on the artichokes before cooking. You could also add fresh herbs, like thyme or rosemary, into the water for a fragrant touch.
- Dipping sauces: Classic melted butter is always a great choice, but you can try other dips like a lemon garlic aioli, hollandaise sauce, or a balsamic vinaigrette for a flavorful twist. A yogurt-based dip with herbs or a tangy mustard dip also works beautifully.
- Lemon-infused artichokes: For a bright citrus flavor, add a couple of lemon slices or a squeeze of lemon juice into the Instant Pot along with the water. This will give the artichokes a light, fresh taste.
- Stuffed artichokes: You can get creative by stuffing the artichokes with breadcrumbs, garlic, and Parmesan cheese before cooking. This turns them into a more filling and flavorful side dish.
- Alternative cooking method: If you don’t have an Instant Pot, you can steam the artichokes on the stovetop. Place them in a steamer basket over boiling water, cover, and steam for about 30-40 minutes until tender.
Storage and Reheating
- Storing leftovers: If you have any leftover cooked artichokes, allow them to cool completely before storing. Place them in an airtight container and keep them in the refrigerator for up to 4 days.
- Reheating instructions: To reheat the artichokes, you can either warm them up in the microwave or use the stovetop. For the microwave, place the artichokes in a microwave-safe dish and heat them for about 1-2 minutes or until warmed through. On the stovetop, place the artichokes in a pan with a little water, cover, and heat over medium-low heat until warm.
- Freezing option: While fresh artichokes are best, you can freeze cooked artichokes. Wrap them tightly in plastic wrap or place them in a freezer bag, removing as much air as possible. They can be stored in the freezer for up to 3 months. To reheat, thaw them in the refrigerator overnight and warm them up as mentioned above.
Frequently Asked Questions
Can I cook frozen artichokes in the Instant Pot?
Yes, you can! If your artichokes are frozen, there’s no need to thaw them beforehand. Simply add 1-2 extra minutes to the cooking time for perfectly tender artichokes.
How do I know when the artichokes are done?
The artichokes are ready when the leaves pull off easily, and the base of the leaves is soft and tender. You can also check by inserting a knife into the stem—it should glide in easily.
Can I cook more than four artichokes at once?
The number of artichokes you can cook depends on the size of your Instant Pot and the artichokes themselves. As long as they fit comfortably without overcrowding, you can cook more. If you need to cook in batches, keep the first batch warm while the second batch cooks.
What can I serve with artichokes?
Artichokes pair wonderfully with melted butter, garlic aioli, or even a tangy vinaigrette. They make a great appetizer or side dish and pair well with grilled meats, fish, or even pasta dishes.
Do I need to trim the artichokes before cooking?
Trimming is optional but can make for a more visually appealing presentation. You can snip the thorny ends of the leaves and cut off the top inch of the artichoke if you’d like, but it’s not necessary for cooking.

I have used my IP to pressure cook artichokes for quite a while, and the result is very nice, but you must be using extremely small chokes to fit four on their bottoms. The most I can fit into a six qt IP is three,(four inches across) and I have to lay them on their sides to squeeze them in. I pressure cook from thirty-five to forty minutes to finish, but it’s worth it.
