The butter melts perfectly on these delicious potatoes. The flavor is divine! You can add any seasonings you love; we used salt, pepper, garlic powder, and Italian seasoning. These seasonings are crowd-pleasers and compliment any other dishes you serve with the potatoes.

You can cook however many potatoes you need for the meal you are serving. The cooking time remains the same. So you can cook red potatoes for two or more! It all depends on how many potatoes you can fit in your instant pot. That makes this a great easy side dish for entertaining.

How To Make Instant Pot Red Potatoes

First prep your potatoes. Wash them and chop into uniform pieces (halves or quarters).

Open up the instant pot and pour in a cup of water. You can use a trivet or place the potatoes directly in the water.

Turn the valve to sealing and set to high pressure for 7 minutes. When cooking time is over, quick release the steam. Once the pin has dropped, open the instant pot and remove the potatoes with a slotted spoon.

Place potatoes in a mixing bowl with small slices of butter. The heat from the potatoes will melt the butter. Sprinkle on seasonings and toss potatoes with a spoon to coat in melted butter and seasonings. Now they’re ready to serve!

Cooking Tips

  • Totally up to you to peel the potatoes or not. It’s your preference
  • Can slice potatoes into quarters or halves depending on the size of the potatoes. If they are particularly small, you may not need to cut them at all
  • Use a slotted spoon to remove the potato pieces from the instant pot, leaving behind the excess water
  • Seasonings and butter are optional in this recipe
