Sausage and Peppers in the Instant Pot
This hearty meal cooks up all together in just minutes. You’ll love the convenience and all the flavor. It’s a fantastic recipe if you’re cooking for a crowd or just want to enjoy a warm, traditional meal on a Sunday night. You can make it completely low carb by serving with veggies or enjoy the sauce over mashed potatoes. Yum!
Since the sausage comes pre-seasoned, you do not need to add the usual salt and pepper. This recipe recommends garlic powder and Italian seasoning as they go well with the seasonings already in the sausage. Or you can add any seasonings you prefer, such as dried or fresh basil, thyme, or paprika.

How To Make Instant Pot Sausage and Peppers
Start by adding a 1/2 cup of water to the instant pot. Typically, you would need 1 cup of water for cooking in the instant pot, but in this recipe, some water comes from the tomato sauce and peppers.
Time to peel and slice the onion. Next, separate out the slices and add them to the instant pot.
Wash as many bell peppers as you would like in the final dish. Core the bell peppers and slice them. Add them to the instant pot.
Sprinkle in a 1/2 tsp each of garlic powder and Italian seasoning. Add sausages and finally, the tomato sauce on top.
Cover the instant pot with lid and set the valve to the sealing position. Cook on high pressure for 20 minutes, then quick release the steam. Once the pin has dropped, you can open the instant pot and pour the contents into a heat-proof serving dish.
Cooking Tips
- This recipe calls for garlic powder and Italian seasoning, but you can use any seasoning you like on sausage and peppers. You probably do not need salt, as the sausage comes pre-seasoned, but you can always check at the end of cooking time and add salt to taste
- Placing the tomato sauce at the top of the instant pot prevents the “burn” notification that some instant pots show if the sauce cooks at the bottom of the pot
