Instant Pot Zucchini

As summer approaches, zucchini becomes a go-to vegetable in my kitchen. This recipe for Instant Pot Zucchini is a new take on one of my favorite vegetables – I know you’ll love it, too!

This side dish is great hot or cold and is a sure hit for any gathering. It is convenient and you probably have the ingredients on-hand. It you ask me, that is a major win for this Instant Pot Zucchini recipe. All you have to do is put your zucchini and water in the Instant Pot. Close the lid and turn to a sealed position. Press the “Manual” or “Pressure Cook” button and set the time to two minutes on High pressure.
After your zucchini is done cooking, quick release the steam and drain the zucchini. Add olive oil and minced garlic to the Instant Pot and press the saute button. When the garlic starts sizzling (my mouth is seriously watering) add the drain zucchini, tomato sauce, salt, red pepper flakes, and Italian seasoning. Mix your ingredients until they are combined. Add salt to taste if it is needed. Cook for two minutes and your Instant Pot zucchini is ready to be served!

Instant Pot Zucchini
Ingredients
- 4 zucchini cut into 1/2 inch pieces
- 1/2 cup tomato sauce
- 2 tsp olive oil
- 2 cloves garlic minced
- 1/2 tsp red pepper flakes
- 1/2 tsp Italian herb seasoning
- 1/2 tsp salt
- 1 cup water
Instructions
- Put zucchini and water in the Instant Pot. Close the lid and turn the valve to a Sealing position. Press the "Pressure Cook" or "Manual" button and set the time to 2 minutes on High pressure.
- When it's done cooking, quick release (QR) the steam. Drain zucchini in a colander.
- Add olive oil and minced garlic to the Instant Pot and press the Saute button. When the garlic starts sizzling (in about 1 minute), add drained zucchini, tomato sauce, salt, red pepper flakes and Italian seasoning, and mix until combined. Add salt to taste if needed. Cook for 2 minutes, then remove to a serving dish.

This looks good! I’m new to the Instant Pot, but looking for fast easy ideas. If I need to double or triple the recipe size for a party, will the Instant Pot still work (size/volume-wise) and will cook time increase?

You can double or triple it, as long as the ingredients are below “Max Fill” line of the Instant Pot. The cooking time and the amount of water remains the same.

Love this Instapot adaptation of one of my favorites. Just mind the zucchini. Maybe the ones I’m getting from my garden are gigantic- but I use two max and even then I eye another 25-50% of the other ingredients.

From Byron I made this for the first time today it will not be my last I’m diabetic only veg meat fish and chicken no tomatoe sauce n house today my wife said use our Ragusauce I did wow i can’t wait till my okra bushes produce them and this recipe are going to be out of sight thank you from Byron may God bless you i am 81 years old think of all the meals of zucchini i,ve missed
Was skeptical at first, but needed to use up ten small zucchini, and about a cup of passata, both discounted and about to expire. The aroma as it cooked was amazing, and it was delicious. This is definitely a keeper recipe.
