Authentic Israeli salad uses Persian cucumbers – this variety of cucumbers are small in size, very hard and have very small seeds.  Persian cucumbers are sold in many ethnic supermarkets.  A very close substitute for a Persian cucumber is English cucumber – English cucumbers are those long cucumbers that are sold wrapped in plastic.  Or you can use any plain old cucumber – even the common cucumbers taste amazing in this salad!

Israeli Salad Recipe With Tomatoes, Cucumbers, Onions and Parsley

This is an authentic Israeli salad recipe made with tomatoes, cucumbers, onions and parsley, and dressed with the olive oil and freshly squeezed lemon juice. This salad is so refreshing, crunchy and healthy! Best of all, it is super easy to make!

Ingredients

  • 4 medium tomatoes
  • 2 English cucumbers or 4 Persian cucumbers
  • 1 medium onion
  • 1/2 bunch parsley
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  • Put olive oil and lemon juice in a cup and whisk with a fork until combined.
  • Dice the tomatoes, cucumbers and onion into small pieces.
  • Put parsley in a food processor and pulse several times, until minced.
  • Put diced tomatoes, cucumbers and onion in a large bowl. Add the minced parsley and stir until combined.
  • Pour the olive oil and lemon juice dressing over the salad and toss until combined.
  • Sprinkle with salt and pepper to taste and toss until combined.
