Keto Butter Cookies With Almond Flour
Ingredients
- 1 cup almond flour
- 4 tbsp butter softened
- 1/4 cup erythritol
- 1/2 tsp vanilla
Instructions
- Preheat the oven to 350F. Line a baking sheet with parchment paper.
- Put all ingredients in a food processor and process until the mixture turns into a dough ball (about 1-2 minutes).
- Divide the dough into 10 equal parts and roll each part into a ball.
- Place each dough ball on a baking sheet and flatten into a cookie shape either by pressing with your hand on top, or by pressing with a fork in a criss-cross pattern.
- Put the keto cookies in the oven and bake for 10 minutes.
- Remove the keto cookies from the oven and let cool on a baking sheet until cooled completely.
I made these cookies yesterday and came up with an idea for a mini low carb dessert. Use a cookie for a “crust”. Put one cookie in a bowl and top with a low carb mousse and sugar free whipped cream. Really yummy!

Hi, I made these 3 times and they were soft, not as “firm” as the normal butter cookies. Are the cookies meant to be soft?
If you’d like them firmer, just increase the baking time by a few minutes.

Thought I should let you know, I make a batch of these almost every week. They are so stupid easy to make and delicious. Better than Girl Scout sugar cookies(you know the ones). I don’t waste time with a fork. I roll up the dough in my hand , press it out in the palm of my hand and put it on the parchment. My husband likes choc.chip ,so I use golden monkfruit for the sweetner and Lilly’s choc.chips for him. Also tried the choc. mousse idea mentioned by previous reviewer. Delicious!!Thanks so much!!

I did tweak the recipe some, I changed the amount of the added butter just slightly which gave my cookie a better stand up when baking and also chilled the dough before baking. I also use salted butter and add a pinch to the recipe., I also dust
