How To Make Meat Roll From Chicken Thighs
Step 1: Cut-up boneless skinless chicken thighs into 1/2-inch cubes and season with garlic powder, salt, pepper and any other seasonings you like.
Step 2: Put the chopped meat on a double-sheet of heavy-duty foil and shape into a log shape.
Step 3: roll the foil as tighly as possible to enclose the meat. Put the foil-wrapped meat roll on a baking sheet. Bake in pre-heated 350F oven on a middle rack for 80 minutes.
Step 4: Do not unwrap the foil when the meat roll is done baking. Let the roll cool down at room temperature for 30 minutes, then put something heavy on top of it (like a cutting board with a large jar on top, or a bag of beans or rice) and put in a refrigerator overnight. (On a picture below, the meat roll in foil is under the cutting board and a heavy pickle jar is on top).
Step 5: Remove the chicken thigh meat roll from a refrigerator the next day and unwrap the foil. It’s ready to eat!
Slice the meat roll into slices and enjoy!

Tips For Success
- Wrap Tightly: Make sure to wrap the chicken roll tightly in the foil. This helps it hold its shape during baking and ensures even cooking.
- Season Generously: Don’t be afraid to adjust the seasonings to your taste. You can add herbs, spices, or even a bit of grated Parmesan for extra flavor.
- Use Heavy-Duty Foil: Regular foil can tear easily, so use heavy-duty foil to keep everything securely wrapped while baking.
- Cool Completely Before Slicing: Let the meat roll cool completely in the fridge before slicing. This helps it firm up, making it easier to cut into clean, even slices.
- Experiment With Different Flavors: Feel free to customize the seasoning. Try adding paprika, Italian herbs, or a sprinkle of smoked salt for a different taste.
Variations and Substitutions
- Add Cheese: For a richer flavor, mix in shredded cheese like mozzarella, cheddar, or Parmesan with the chicken before forming the roll. The cheese will melt and add a deliciously gooey texture.
- Herb-Infused: Enhance the flavor by adding fresh or dried herbs like rosemary, thyme, parsley, or oregano. These herbs pair wonderfully with chicken and add a fresh, aromatic touch.
- Spicy Kick: If you like a bit of heat, try adding red pepper flakes or a dash of cayenne pepper to the seasoning mix. You can also mix in chopped jalapeños for extra spice.
- Wrap It in Bacon: For a truly indulgent twist, wrap the outside of the foil-covered roll in a few slices of bacon before baking. The bacon will add flavor and help keep the chicken moist.
- Different Proteins: You can substitute the chicken thighs with ground chicken, turkey, or even a mixture of ground beef and pork. Each version will have a slightly different taste and texture.
Storage and Reheating
- Storing Leftovers: Store any leftover chicken thigh meat roll slices in an airtight container in the refrigerator. They will stay fresh for up to 4 days.
- Freezing: You can freeze the meat roll for up to 3 months. Wrap the slices in plastic wrap, place them in a freezer-safe bag, and remove as much air as possible. Thaw in the fridge overnight before serving.
- Reheating: This meat roll is best enjoyed cold, but if you prefer it warm, reheat the slices gently in a skillet over medium heat or in the microwave for about 30 seconds.
Frequently Asked Questions
Can I make this meat roll ahead of time?
Yes! This Keto Chicken Thighs Meat Roll is perfect for meal prep. It can be made ahead and stored in the refrigerator for up to 4 days, making it a convenient option for quick snacks or lunches.
Can I use chicken breasts instead of thighs?
Yes, you can use chicken breasts, but keep in mind that they may result in a slightly drier texture compared to chicken thighs. If you prefer using chicken breasts, consider adding a bit of extra fat, like olive oil or butter, to keep it moist.

Can I add other seasonings or flavors?
Absolutely! Feel free to customize the seasoning by adding your favorite herbs, spices, or even a splash of soy sauce or Worcestershire sauce for extra flavor.
Is this meat roll served hot or cold?
Traditionally, this meat roll is served cold, sliced thinly. However, you can also enjoy it warm if you prefer. Simply reheat the slices in a skillet or microwave before serving.
