Mexican Street Corn Salad Recipe
Ingredients
- 2 lbs frozen corn thawed (or fresh corn kernels cut off the cob)
- 1/4 cup mayo
- 8 oz crumbled Cotija cheese or use crumbled Feta instead
- 1 jalapeno pepper finely chopped
- 1 bunch cilantro finely chopped
- 3 garlic cloves minced
- 1 lime squeezed
- Salt and paprika to taste
Instructions
- Put corn, jalapeno, cilantro and garlic in a bowl and mix until combined.
- In a cup, mix the mayo and lime juice until combined.
- Add the mayo dressing to the corn mixture and mix until combined.
- Add the crumbled cheese to the corn mixture and mix until combined.
- Add salt and paprika to taste.
I prefer grilling corn on the cob and cutting it off for my Mexican street corn. Also, la creama is so much better and more authentic than mayo. I love sprinkling Taijin seasoning on – has the chili and dehydrated lime that makes for the perfect flavor.
The combination of sweet corn, spicy jalapeño, garlic, cilantro, mayo, lime juice, and tangy cheese is perfect.
