How To Make Microwave Eggplant

Wash the eggplant and slice off the stem.

Cut eggplant in half lengthwise and then into strips. Cut those long strips into cubes/pieces.

Place eggplant pieces into a microwave-safe dish. Top with salt, red pepper, and garlic powder. Toss with a spoon to coat eggplant thoroughly in seasonings.

Cover dish loosely with a lid. Place in microwave and cook at high power for 5 minutes.

Check to see if eggplant is tender to your liking. At this point, you can add a drizzle of olive oil or more seasonings, if you would like to do so.
