Can I use another muffin mix to make pancakes?
Of course! I used Martha White muffin mix, but you can use any muffin mix such as Betty Crocker, Kruzteas, Jiffy or other brands.
How To Make Muffin Mix Pancakes
Preheat griddle to 375 degrees and brush surface with a small amount of cooking oil.
Crack one egg into a bowl. Whisk it up.
Add the milk and muffin mix to the bowl. Stir to combine.
Use a 1/4 cup scoop to move batter to griddle and make about 6 pancake shapes. Once the surface has bubbled, flip the pancakes over to finish cooking. The pancakes should take about 2 minutes per side.
When the pancakes are golden brown on both sides, remove with a spatula and lay out on a serving platter.
Use the remainder of the batter to make 5-6 more pancakes.
Serve finished pancakes with butter and maple syrup, if desired.

- Use any variety/flavor of muffin mix
- You can cook these pancakes on a griddle or in a frying pan on the stove. If you use a frying pan, heat it to medium high for this recipe.
- If the cooking surface is nonstick, you only need a little bit of oil.
