One Dish Chicken And Rice Recipe

This chicken and rice recipe is a true one dish meal. Everything is cooked in one pot, and you don’t need a side dish! And less dishes to wash for you, the better :)
Another great thing about this yummy chicken and rice recipe is that it requires just five ingredients. These ingredients are very common and are usually stocked in a pantry and refrigerator: chicken, rice, carrot, onion and garlic. These simple ingredients create a delicious chicken and rice dinner!
One Dish Chicken And Rice Recipe
Ingredients
- 1 lb boneless skinless chicken breast
- 1 cup white rice
- 2 cups water
- 1 carrot
- 1 onion
- 2 garlic cloves peeled
- 2 tbsp oil
- 1 tsp salt
- 1/4 tsp pepper
Instructions
- Cut the chicken into 1-inch pieces.
- Chop the onion into small pieces.
- Shred the carrot using the food processor shredder blade.
- Cut the chicken into 1-inch pieces.
- Heat the oil in a non-stick heavy bottomed pot over medium-high heat. Add the onion, carrot and chicken. Cook, stirring periodically, for 5 minutes.
- Add the rice to the chicken mixture and mix until combined. Add water, garlic cloves, salt and pepper.
- Bring to a boil, then reduce heat to low, cover and simmer for 15 minutes.
- Mix with a fork to fluff the rice. Add more salt and pepper to taste if needed.
