This Persian Cucumber Salad (also called Shirazi Salad) is delicious, colorful, and healthy. With crunchy vegetables and fresh, homemade dressing, it’s the perfect salad for entertaining or a quick lunch.

This is a filling salad on its own, but you can also add grilled meats or cubed cheese for an added boost of protein. And the simple dressing is so flavorful, you’ll love it.

How To Make Persian Cucumber Salad

Be sure to wash the cucumbers, tomatoes, and parsley first. Chop off the ends of the cucumber and slice into pieces. To do this, first slice the cucumber into halves, then lengthwise slices, and finally chop into small pieces. Add to the salad bowl.

Next chop the tomatoes and add them to the bowl.

Gather the parsley in a bunch and chop it up, stopping about an inch or two from the bottom. Add chopped pieces to the salad bowl.

Peel onion and slice off about 1/3 of it. Chop this into small pieces as well, then add to the bowl.

Now it’s time for the dressing. Add olive oil and lemon juice (squeezed from a quarter of a lemon) to a measuring cup. Whisk until combined. Drizzle on salad.

Add salt and pepper to taste and mix salad ingredients together. Now it’s ready to serve!

  • 4 Persian cucumbers
