Pico De Gallo Mexican Fresh Salsa Recipe

This mouthwatering authentic Mexican fresh salsa is made of finely chopped fresh tomatoes, onions, jalapeno pepper, garlic, cilantro and lime juice.  Pico de gallo salsa is as fresh and zesty as it sounds! It has so much flavor and personality, you feel the explosion of zest in every bite!  Fresh salsa involves all your tastes buds and nerve endings in your mouth, making you salivate and reach for more and more and more!

Salsa Fresca

“Pico de gallo” means “rooster’s beak” in Spanish.  The reason why this delicious fresh salsa is named after the beak of a rooster is not exactly known.  There are several theories as to why it’s called pico de gallo.  The first theory is that in the old days this salsa was eaten by hand in Mexico, with the thumb and forefinger grabbing the pieces of salsa (the action resembling the opening and closing of rooster’s beak).  The second theory is that the ingredients of pico de gallo are cut to be the same size as the food of roosters (resembling bird food). And the final theory of the pico de gallo name origin is that the bright colors of this salsa resemble the colors of the rooster.

Pico de gallo is very versatile and can be eaten in many different ways.  The most obvious way of serving pico de gallo is as a salsa, scooping the fresh salsa with crunchy chips.  You can also serve it as a salad or side dish, and eat it with a fork or spoon.

How To Make Pico De Gallo

Making authentic Mexican pico de gallo is very easy.  All you need to do is finely chop the tomatoes, onion, jalapeno and cilantro, mix it and season with fresh garlic and lime juice.  You can make it mild by adding less jalapeno, or spicy by adding more – it’s totally up to you! Also, if you are not a cilantro fan, just use fresh parsley instead – it will be just as yummy and zesty!

Ingredients

  • 5 to matoes finely chopped
  • 1/2 large red onion finely chopped
  • 1 jalapeno finely chopped
  • 1/2 bunch cilantro finely chopped (leaves only, no stems)
  • 3 garlic cloves minced
  • 1/2 lime squeezed
  • Salt and pepper to taste

Instructions

  • Mix all ingredients in a bowl. Add salt and pepper to taste
