Pineapple Salsa In A Pineapple Shell Bowl
Ingredients
- 1 pineapple
- 1 bell pepper diced
- 2 to matoes diced
- 1/2 red onion finely diced
- 1 jalapeno finely diced
- 1/2 bunch cilantro finely chopped
- 1 lime
Instructions
Make the pineapple bowl
- Cut the pineapple in half lengthwise, leaving the stem attached to one of the halves. Scoop out the pineapple flesh from the shell with the stem (first use a knife to cut on the sides, then an ice cream scoop to get the pineapple out).
Make the pineapple salsa
- Dice the pineapple flesh.
- Put pineapple pieces in a bowl and add diced bell pepper, tomatoes, red onion, jalapeno and cilantro.
- Cut the lime into quarters and squeeze the lime juice over the chopped pineapple mixture. Mix the pineapple salsa until combined.
- Put the pineapple salsa in a pineapple shell bowl and serve. (Not all salsa will fit in the pineapple shell. Serve the leftover pineapple salsa in a regular bowl).
