This creamy potato salad is the king of all potato salads!  This easy potato salad recipe with egg is so simple, yet so mouthwatering!  Bring it to a potluck and there won’t be a single drop of this potato salad left.  Not a crumb!  The bowl will be scraped out so clean, you won’t believe it!

The secret ingredient of this easy potato salad is the sweet pickle relish.  It gives the creamy dressing such amazing depth of flavor, it can’t get any better than that! A touch sweet, a bit tangy, absolutely just right!

Forget about using only mayo to dress the potato salad – it’s too flat and one-dimentional.  The creamy dressing for the best potato salad is made with mayo, mustard and sweet pickle relish.  This way you get the creaminess of mayo and the added flavors of mustard and sweet pickle relish.  Nobody will guess there is mustard in there (it kind of dissolves in the salad and becomes invisible), but they’ll marvel at the taste!

Also, make sure you use a good mayo.  My favorite brand is Hellman’s Real Mayo – and they didn’t pay me to write it, I truly think it’s the best :) And please, please, please – do not use the low-fat or fat-free mayo!

Another secret to the best tasting potato salad is drizzling vinegar over the potatoes right after they are cooked.  The vinegar just makes potato taste and texture so much more potato-salad-y :)  Yes, potato-salad-y – meaning that it turns the ordinary potatoes into perfect potato salad potatoes!

For the best potato salad, you should use the potatoes with the thin skin – either the red potatoes or the yellow potatoes.  Don’t use the baking or Russet potatoes – they are too flaky and will fall apart.  We want the distinct pieces of potatoes to shine in this delicious potato salad!

How To Make Best Potato Salad

Making the best potato salad is really easy.

  • First, boil the peeled potatoes.  In a separate pot, boil the eggs.
  • While potatoes are boiling, chop the celery and green onions, and make the dressing by combining mayo, mustard and sweet pickle relish.
  • Next, cut potatoes into pieces and drizzle with vinegar.
  • Peel and chop the eggs and add to the potatoes.
  • Add the chopped celery and green onions to the potatoes, then add the dressing and mix until combined.
  • Add salt and pepper to taste and sprinkle with paprika.

That’s it! Your best ever potato salad is ready!

Ingredients

  • 8 medium potatoes peeled and quartered
  • 2 tbsp white vinegar
  • 5 hard-boiled eggs peeled
  • 2 celery stalks diced
  • 4 green onion stalks diced
  • 1 1/2 cup mayo
  • 1 tbsp mustard
  • 2 tbsp sweet pickle relish
  • 1 tsp sweet paprika optional
  • Salt and pepper to taste

Instructions

  • Bring a pot of salted water to a boil. Add potatoes and cook for 25 minutes. Drain and cool for 15 minutes.
  • Cut the potatoes into 1/2 inch pieces.
  • Put potatoes in a large bowl, drizzle with white vinegar and stir.
  • Chop the eggs and add to the potatoes.
  • In another bowl, mix mayo, mustard and sweet pickle relish.
  • Add the mayo mixture to the potato salad and stir to combine.
  • Add salt and pepper to taste.
  • Put the potato salad in a serving bowl and sprinkle with paprika.

  1. I’ve made my potato salad basically like your recipe but I use Blueplate Mayo and I don’t make a dressing. After the potatoes are drained I put everything in that pot with the cooked and already cubed potatoes and the mayo is last. I’ve used every kind of potato it makes no difference because while they are still warm/hot everything will slightly cream together. It’s delicious hot or cold. I usually don’t add onion or celery but I have and in the summer when I use red potatoes I add bacon. I will say I have not used the vinegar ever but will give it a try.

    I thought you got my recipe there for a second! Lol I do a few things different, I peel and dress my potatoes while they are hot. The warm potatoes just sop up that mayo mix, yummy goodness. I do not add celery, onion, paprika or vinegar. I only use HELLMANS MAYO. I call my salad a more “smashed” potato salad. Give it a try and see how you like it!! I’ve been told I should sell mine.

  3. My potatoe is basically the same, I do add green onions & celery but my secret ingredient is apple. I chop up an apple same size as celery. Gives an extra layer of flavor, my family and friends love it.

  4. I read an article recently that took a poll on whether people preferred dill pickle or sweet pickle in their potato salad. Dill pickle won overwhelmingly. While I know this is true in my family and extended family, I wonder if this is not regional. This recipe is exactly the way I make mine except I use dill pickle relish.

  5. I tried this with chopped Nathan’s sweet horseradish pickles. I love the taste of potatoes and horseradish and this gave this great potato salad an even greater taste!

      1. I grew up with this recipe. it’s my favorite! We used white onion or red even sweeter. We soaked the chopped onion in ice water for about 5 min. then drained.it washes away some of that sulfur- ish taste and leaves the onions bright tasting.

  9. This has always been my base but since I dislike the texture of celery I used seed instead. Also had no green onions so I used a small sweet onion & garden chives. For crunch I add granny Smith apples & radishes for color. Yes Hellmans is the best

  10. If you don’t like the pieces of egg yolk, just chop the whites in the salad and garnish by pressing the cooked yolks thru a small strainer. It looks like goldenrod!

  11. Great recipe. Had fun with my 87 yr old mom making it. One word of caution, don’t substitute apple vinegar for what is called for. Go to the store and get the right thing :)

  14. This recipe is fantastic! I used 1 c mayo & 1/2 c Miracle Whip. Instead of white vinegar, I used apple cider vinegar. So good! We didn’t use onions because my son hates them. Thank-you!!

  15. This is our family’w potato salad recipe. Mother made it when I was growing up, and I make it for my boys and grand kids. They love it, too. I make it with sweet pickles, too.

  16. P.S. Mother said the secret to good potato salad is to cut the potatoes small to cut the onion as fine as you can. I have yet to find anyone who could match her onion cutting skill. She would boil the potatoes and eggs and put them in the refrigerator over night. She never measured any of the ingredients. She made a pyramid of the ingredients with each layer smaller than the one before – Potatoes, eggs, Miracle Whip (sorry folks but that’s what we like), onions, sweet pickle relish, ketchup (yup-just a little), and a plop of mustard on top. Mix and let flavors combine-overnight is best.

  17. This is basically the same recipe I’ve been making for over 50 years! We always add cucumbers, though…otherwise, the same…celery, green onion, as many eggs as potatoes, pickle relish/juice, mayo, mustard, paprika, salt and pepper. I’ve never done the vinegar but the pickle juice probably does the same thing? The best! Oh, the hubs likes it warm so sometimes it’s more like mashed potato salad!
