Air Fryer Purple Potatoes
Looking for a new side dish idea? These purple potatoes are a show-stopper. And they taste just like regular potatoes, so they’re perfect for picky eaters. Just season and cook in the air fryer!
You can add any seasonings you love on potatoes. We used olive oil (to crisp them), salt, pepper, and garlic powder. These seasonings add flavor without overpowering the potatoes. Once cooked, you can add more flavor options with dipping sauces like ketchup, BBQ, or honey mustard. These potatoes make a great side dish for the whole family.

How To Make Purple Potatoes In Air Fryer
Start by cutting the potatoes into uniform pieces. If they are small, you can leave them as is. With larger potatoes, you’ll want to cut them in half or quarters so that they cook more evenly in the air fryer.
Add potatoes to a mixing bowl and drizzle with olive oil. Top with seasonings. Use a spoon to toss potatoes in oil and seasonings to ensure all pieces are well coated.
Place potatoes into air fryer basket and heat to 400 degrees for 20 minutes. Halfway through cooking time, remove air fryer basket and shake potatoes to help them cook more evenly.
After cooking time is up, pierce potatoes with a fork to ensure that they are tender to your liking. If not, replace basket in air fryer and cook for another 5 minutes.
Once potatoes are done cooking, remove from air fryer basket with a spatula and place on a serving plate.
Cooking Tips
- Use any kind of cooking oil or omit if you prefer (it does make the potatoes crispier)
- No need to peel the potatoes, the skin is edible
- Use seasonings of your choice on these potatoes
Do Purple Potatoes Stay Purple When Cooked?
Yes! While the vibrant purple hue may fade a bit during the cooking process, the potatoes will indeed still be purple. And they taste just like “regular” potatoes, so they are perfect for adding a little variety to dinner while still pleasing picky eaters.
