Healthy Red Cabbage Slaw Recipe

This easy red cabbage slaw recipe is so healthy and delicious! Shredded red cabbage and carrots are marinated overnight in a zesty homemade dressing, which makes it so full of flavor, crunchy and refreshing!
This red cabbage and carrot slaw is so colorful and tastes amazing! It’s truly a feast for the eyes and stomach!
Making this red cabbage slaw is really easy. Just mix a simple dressing of oil, vinegar, salt, pepper, garlic and onion powder, add shredded cabbage and carrots and marinate overnight. You can use packaged pre-shredded carrots and cabbage or shred your own.
I always shred by own cabbage and carrots because it’s cheaper and tastes fresher than bagged. You can shred the whole head of cabbage in 2 minutes by using a food processor! To shred carrots and cabbage in the food processor, use the top shredder disk attachment. Cut the cabbage and carrots in large chunks, put them in the top chute of the food processor fitted with the top shredder disk, press the button and it shreds the whole thing in seconds!
Another great thing about this red cabbage slaw is that it’s a made-ahead recipe. The longer it sits, the better it gets! To develop a full flavor, the cabbage has to marinate for at least 8 hours, and you can leave it marinating for up to 5 days! Make-ahead recipes make life so much easier :) If you are making this red cabbage slaw for a party, make it several days ahead so it leaves you free time to make other foods and do other things!
By the way, you can also make this recipe with green cabbage the exact same way :) Red cabbage just looks more colorful and festive, that’s all! You can also use the olive oil instead of canola, but canola oil is more mild tasting and classic for this recipe. Another variation you can try it using balsamic vinegar instead of red wine. Enjoy!

Best Red Cabbage Slaw Recipe
Ingredients
- 1 head red cabbage cored and shredded
- 2 carrots peeled and shredded
- 1/4 cup canola oil
- 1/2 cup red wine vinegar
- 1 tbsp sugar
- 2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
Instructions
- In a bowl, mix the canola oil, red wine vinegar, sugar, salt, pepper, onion powder and garlic powder to make a dressing.
- Put shredded red cabbage and carrots in a large bowl. Pour dressing over it and toss to combine.
- Cover the bowl and refrigerate for at least 8 hours or overnight. Drain the red cabbage slaw before serving.
