Crispy Roasted Leeks
You’ll love how leeks taste when roasted! They have a perfect texture and golden brown edges. Milder than smaller types of onions, leeks can be added to all sorts of dishes to bring out more depth of flavor.
Add your favorite seasonings and roast for 25 minutes. You can serve these leeks as is, or top with sauce, crumbled cheese, or even fresh herbs. With a slightly sweet flavor, they are a versatile vegetable. Roasted leeks make for a healthy, wholesome side dish.

How To Make Roasted Leeks
Start by preheating the oven to 425 degrees and prepping a baking sheet with parchment paper.
Wash the leeks and chop off the dark green section– it’s inedible. Slice the white part of the leek in half width-wise and then again length-wise, to make 4 halves (see photos).
Lay out leeks on parchment paper atop baking sheets. Brush with oil using a pastry brush. Sprinkle on salt and pepper. You can also add any other seasonings that you prefer.
Cook for 25 minutes or until the leeks are perfectly roasted with gold brown edges.
Cooking Tips
- Be sure to wash the leeks thoroughly as they can have dirt or debris in between the layers
- Place the leeks inside part up on the baking sheet
- Olive oil is suggested for this recipe, but you can use any vegetable oil you prefer
How Do You Cut Leeks For Roasting?
First wash the entire leek. Then chop off the dark green top and dispose of it. Next slice the white part of the leek in half. You can then cook it as is or slice it into rounds. Note: you may need to rinse the slices again as dirt and sand can get caught in between the layers.
Do You Have To Soak Leeks Before Cooking?
It’s not required, but soaking the leeks does help with rinsing out dirt that may be lodged in the layers of the leek. Soak the entire leek in cold water for about 10 minutes and then rinse thoroughly.
Why Are Leeks Used Instead of Onions?
Leeks have a more mild flavor than onions and therefore can be more palatable and work in a variety of recipes.

Like your recipes but please don’t tell people that the green bits of leeks are inedible. As long as they’re well cleaned they can be chopped and added to stir frys or well steamed with some shoyu/tamari & a splash of olive oil. I’ve being eating them for decades. They’re very tasty & at 75 they’ve done me no harm👍😊
I’m not a vegan but I want to try to eat veggies. I never knew leeks could taste so good roasted! Next time, I’ll try adding some herbs like thyme or rosemary.
