Roasted Red Skin Potatoes in the Air Fryer
For a basic, yet flavorful side dish, these red skin potatoes really hit the mark! Just chop, season, and cook in the air fryer. An easy and nutritious side dish that goes with so many main courses.
So much quicker than traditional oven roasting and healthier than frying, the air fryer is the perfect appliance for cooking up red skin potatoes.
We season these simply with salt and pepper, plus olive oil to help the seasoning stick to the potatoes and get that nice golden brown color in the air fryer.
Be sure to toss these potatoes in the air fryer basket halfway through cooking time to ensure crispy outsides on all the potato pieces. Perfectly cooked!

How To Make Air Fryer Red Potatoes
Start by prepping the potatoes. Wash and dry, then chop into about 1” pieces. No need to peel the thin skin, just leave it on.
Add to a medium-sized bowl and pour on the olive oil. Sprinkle in salt and pepper.
Using a large spoon, toss potatoes in seasoning and oil to coat all sides completely.
Add seasoned potato pieces to air fryer basket and set to cook at 400 degrees for 25 minutes.
Halfway through cooking time (about 12 minutes), pull basket out of air fryer and give it a good shake to move around potatoes. Replace basket and finish cooking.
After time is up, remove potatoes from air fryer basket and serve with a main course or even dipping sauces. Yum!
Potato Cooking Tips
- Red skin on the potatoes is edible and delicious, no need to peel off
- Chop potatoes into same sized pieces (about 1” thick) for even cooking
- Be sure to shake the basket well halfway through cooking time, to get nice, crispy outsides on all the potatoes
- If any potato pieces stick to the bottom of the air fryer basket after cooking, use spatula to remove them

yes, they need much shorter cooking time though, 5-10 minutes or until golden-brown
