Sheet Pan Eggs in Oven
Love an easy and filling breakfast? This one hits the spot! Just whisk up the eggs and add your favorite breakfast toppings. Bake until set and cut into squares for sandwiches or to enjoy as is. This recipe suggests chopped bell peppers and green onions, but you could use shredded cheese, chopped bacon or ham, veggies, or even additional seasonings. It’s totally up to you.
This makes the perfect brunch dish since it’s easy to make ahead of time and produces lots of servings. You can prep a sheet of eggs and bake it the night before, so it’s one less thing to think about when guests arrive. Just warm up and serve! This egg dish would be delicious topped with hot sauce or hollandaise. And it goes well with all the breakfast favorites, like sausage and bacon.

How To Make Sheet Pan Eggs
Preheat the oven to 350 degrees. Then make sure your pan is prepped. You need a 11″ x 17″ sheet pan with shallow sides, so you can pour the egg mixture into it. Spray nonstick cooking spray liberally on the baking sheet so the egg doesn’t stick while cooking.
Crack the eggs into a bowl and whisk them up. Pour them into the sheet pan. Sprinkle on toppings.
Carefully move to oven and bake for 15 minutes or until egg mixture is set in the middle. Remove from oven and allow to cool.
Cut into squares to enjoy now or store in fridge for later. You can also use the egg squares as a breakfast sandwich filling. Yum!
Cooking Tips
- You can use nonstick spray on the sheet pan or brush it with vegetable oil or melted butter
- Use a knife to tap the eggs and help them to crack easier
- If you prefer, you can add water or milk to the eggs before whisking
- Add any toppings you love on eggs, like chopped ham or bacon, veggies, or shredded cheese. You can also cook the eggs up plain
