First, you need cooked sweet potatoes for mashing. This is a perfect way to use leftover sweet potatoes. If you don’t have any, you can microwave a sweet potato, bake sweet potatoes in the oven or cook sweet potatoes in the Instant Pot.
Spray a large, non-stick frying pan or griddle with a non-stick cooking spray and heat over medium-high heat. This is a critical step to perfectly cooked pancakes!
Next, combine the mashed sweet potato, eggs, and cinnamon in a bowl, mixing until smooth. No lumps here!
Laddle the pancake batter on a frying pan let it cook for three minutes, or until the bottom is golden-brown. Carefully flip the pancakes over with a spatula and cook for another two minutes, or until cooked through. Place those tasty pancakes on a plate and enjoy!

2-Ingredient Sweet Potato Pancakes
Ingredients
- 1 cup mashed sweet potato (about 1 large sweet potato)
- 4 eggs
- 1/2 tsp cinnamon optional

Instructions
- Spray a large non-stick frying pan or griddle with a non-stick cooking spray and heat over medium-high heat.
- In a bowl, combine mashed sweet potato, eggs and cinnamon (if using) and mix until smooth.
