Ingredients

  • 2 tomatoes chopped
  • 1 cucumber chopped
  • 1/2 red onion sliced
  • 1 avocado chopped
  • 1/2 bunch parsley chopped
  • 1 tbsp extra-virgin olive oil
  • 1/4 lemon squeezed
  • Salt and pepper to taste

Instructions

  • Put olive oil and lemon juice in a cup and whisk with a fork to make a dressing.
  • Put tomatoes, cucumber, onion, avocado and parsley in a large bowl. Pour dressing over it and sprinkle with salt and pepper to taste. Toss to combine.
