Watermelon Gazpacho Soup
Ingredients
- 3 cups seedless watermelon cut into chunks
- 1 to mato quartered
- 1 garlic clove minced
- 1/2 onion quartered
- 1 cucumber quartered
- 1 lime juiced
- 1/4 bunch parsley bottom stems removed
- 1/2 jalapeno pepper finely chopped
- 1/2 tsp salt
- 1/8 tsp pepper

Instructions
- Put all ingredients in a food processor or blender and pulse until desired consistency (do not overblend).
- Refrigerate gazpacho for 1 hour or until fully chilled.
