Ingredients

tomatoes

can black-eyed peas
drained and rinsed

can black beans
drained and rinsed

can sweet corn

red onion
finely chopped

red bell pepper
diced

bunch
cilantro
chopped
Dressing
1/3
cup
extra-virgin olive oil
1/3
cup
apple cider vinegar

tbsp
chili powder
1/2
lime
juiced
salt and pepper
to taste
Instructions
Pour olive oil, vinegar, lime juice and chili powder in a cup and whisk with a fork to combine to make a dressing.
Put chopped tomatoes, black-eyed peas, black beans, corn, onion, bell pepper and cilantro in a large salad bowl.
Pour the dressing over the salad and toss to combine. Add salt and pepper to taste.
Notes
For best results, refrigerate for 1 hour before serving to allow for the flavors to blend.
