2-Ingredient Sweet Potato Pancakes
These healthy sweet potato pancakes have just 2 ingredients - mashed sweet potato and eggs. The optional 3rd ingredient is cinnamon :) They are paleo and gluten-free - this is a perfect pancake recipe for clean eating!

Ingredients

mashed sweet potato
(about 1 large sweet potato)

eggs
1/2
tsp
cinnamon

Instructions
Spray a large non-stick frying pan or griddle with a non-stick cooking spray and heat over medium-high heat.
In a bowl, combine mashed sweet potato, eggs and cinnamon (if using) and mix until smooth.
Laddle the pancake batter on a frying pan.
Cook for 3 minutes, or until golden-brown on the bottom.
Carefully flip the pancakes over with a spatula and cook for another 2 minutes, or until cooked through.
