Ingredients
- 2 eggs
- 15 oz pumpkin puree
- 13.25 oz cake mix yellow or spice cake flavor
- 1 tsp cinnamon if using yellow cake mix
Instructions
- Preheat oven to 350 and grease an 8"x 12" baking pan with nonstick spray or butter.
- Crack two eggs into a mixing bowl. Whisk them up. Top with a can of pumpkin puree. Mix to combine eggs and puree.
- Add a box of cake mix to the mixing bowl. If you are using yellow cake mix, you can also add a teaspoon of cinnamon (or pumpkin spice).
- Mix everything together. Transfer batter to greased baking dish. Use a spoon to smooth out the surface of the batter and completely fill the dish.
- Bake cake for 30 minutes. Check doneness by inserting a toothpick into the center of the cake. If it comes out clean, the cake is ready. If not, place cake back in oven and bake for another 5 minutes or until done.
- After cake bakes, leave out on countertop to cool for 5 minutes. Then cut into squares and serve!

- You can use spice cake mix or yellow cake mix for this recipe. If using the yellow flavor, you may want to add cinnamon or pumpkin spice, to taste
- Once batter is mixed, feel free to add additional ingredients like chocolate chips, chopped nuts, or raisins
- After pumpkin cake is baked, try topping with frosting, powdered sugar, or cinnamon, for even more flavor
