Instructions
Cut off the stems of the washed Chinese eggplants. Slice them in half lengthwise, then cut them into chunks.
Place the eggplant pieces in a large bowl.
Drizzle the eggplants with 1 tablespoon of olive oil, then sprinkle with 1/2 teaspoon of salt, 1/4 teaspoon of garlic powder, and 1/8 teaspoon of red pepper (or black pepper for a milder option).
Toss the eggplant pieces in the bowl to coat them evenly with the oil and seasonings.
Transfer the seasoned eggplants to the air fryer basket in a single layer.
Set the air fryer to 380°F (193°C) and cook for 15 minutes.
Halfway through cooking, remove the air fryer basket and shake it to redistribute the eggplants for even cooking.
Return the basket to the air fryer and continue cooking until done.
